Purpose of Job:

To supervise and coordinate food services to ensure proper nutrition and to safeguard the health of students, staff and visitors.  The cafeteria manager will maintain compliance with all local, state and federal regulations including child nutrition, public health and safety.

Primary Job Duties/Responsibilities:  The following duties are normal for this job.  These are not to be construed as exclusive or all-inclusive.  Other duties may be required and assigned as needed.

General Responsibilities/Essential Functions:  

  • Estimate food preparation amounts and adjusts recipes, if required, for the purpose of meeting projected meal requirements and minimizing waste of food items
  • Evaluate prepared food for flavor, appearance and temperature for the purpose of presenting items that will be accepted by students and/or staff according to dietary guidelines
  • Implement menu plans for the purpose of meeting students' mandated daily nutritional requirements
  • Inspect food and/or supply deliveries for the purpose of verifying quantity, quality and specifications of orders and/or complying with mandated health requirements 
  • Inventory food, condiments, supplies and equipment at specified intervals for the purpose of ensuring availability of items required for meeting projected menu requirements
  • Maintain equipment, storage, food preparation and serving areas in a sanitary condition for the purpose of complying with current health standards 
  • Manage assigned site operations (e.g. supervise personnel, create menus, monitor meal accounts and expenditures, evaluate new products and/or menus, oversee cleaning procedures, etc.) for the purpose of providing efficient food services at the assigned site in compliance with established nutritional and health requirements 
  • Monitor food service operations (e.g. kitchen equipment, trays, utensils, staff assignments, etc.) for the purpose of ensuring a safe, clean and sanitary working environment in compliance with standard practices and established nutritional and health standards
  • Order food, equipment and supplies for the purpose of maintaining an adequate inventory to maintain operations within established nutritional and budget guidelines    
  • Orient new employees to work center and school site processes for the purpose of providing training and information regarding site operations and activities 
  • Oversee the preparation, cooking, serving and transportation of food and beverage items for the purpose of meeting projected meal quantities and mandated nutritional and health standards and ensuring appealing presentation
  • Participate in unit meetings, in-service training, workshops, etc. for the purpose of conveying and/or gathering information required to perform job functions. 
  • Perform functions of other nutritional services positions, as needed, for the purpose of ensuring adequate staff coverage within site nutritional services operations
  • Prepare a variety of documentation (e.g. meal program records, reconciliation reports, cash summary, time sheets, etc.) for the purpose of providing written support and/or conveying information 
  • Process receipts for the purpose of completing and documenting transactions and/or preparing bank deposits. Reconciles transactions (e.g. meal counts, monies collected, etc.) for the purpose of maintaining account balances in compliance with established policies and procedures and makes daily bank deposits 
  • Respond to inquiries of students, staff and the public for the purpose of providing information and/or direction regarding available food items and/or food service policies and practices 
  • Schedule work hours and assignments for cafeteria employees for the purpose of ensuring adequate coverage for daily operations
  • Follow menu plan for the purpose of meeting mandated nutritional requirements and/or requests of students and school personnel 
  • Stock food, condiments and supplies for the purpose of maintaining adequate quantities and security of items
  • Supervise food service workers and other personnel as assigned (e.g. orients, trains, evaluates, etc.) for the purpose of maximizing the efficiency of the work force and meeting shift requirements
  • Ensure that the use of the district’s resources (time, money, people) are used in the most strategic and effective way possible

  • Maintain a high level of ethical behavior and confidentiality of district information
  • Support the effective delivery of a high quality of education for all students
  • Provide exceptional levels of professional support and service to staff and public
  • May operate a motor vehicle to conduct various work activities
  • Successful completion of Criminal Justice fingerprint/background process and drug screen

Qualifications:  To perform this job successfully, an individual must be able to perform each essential function satisfactorily.  The requirements listed below are representative of the knowledge, skill, and/or ability required.

Experience and Education

  • High School Diploma
  • Any combination of experience and training that would likely provide the required knowledge and abilities to perform the essential job functions is qualifying.
  • Preferred qualifications include:  kitchen management experience, school district cooking and baking experience, prior experience in quantity cooking in a commercial/industrial setting.

Knowledge of

  • Basic math including calculations using fractions, percents, and or ratios
  • Basic computer skills and data entry
  • Safe work practices including OSHA regulations, as they relate to the position
  • Commercial food service sanitation and safety practices and procedures
  • Operation, cleaning, and caring for cooking/baking utensils and equipment
  • USDA and Tennessee Health Code provisions and guidelines concerning handling of food and food service supplies and equipment

     Skill and Ability to

  • Coordinate production of meats, main dishes, baked goods and other foods in large quantity
  • Safely use a variety of food service equipment
  • Identify workplace hazards and/or unsafe conditions and take appropriate action to correct
  • React to change productively and handle task efficiently as assigned
  • Read and write English at a level sufficient to successfully perform the duties associated with the position
  • Understand and carry out oral and written directions
  • Establish and maintain cooperative, working relationships with those contacted in the course of work
  • Such alternatives to the above qualifications as the Child Nutrition Administrative Supervisor or Director of Schools may find appropriate and acceptable.

Abilities/Physical Requirements

While performing the duties of this classification, the incumbent is frequently required to stand, walk, crouch, kneel, use hands to finger, handle, or feel, reach with hands and arms, talk and hear. Employee must frequently lift and/or move up to 25 pounds and occasionally lift and/or move up to 50 pounds.  Specific vision abilities required by this job include close vision, and ability to adjust focus.


While performing the duties of this job, the incumbent regularly works in inside environmental conditions that may be warm.  The employee frequently uses repetitive motion. The employee will be required to attend inservices and training. The noise level in the work environment is usually loud. Individual is subject to frequent interruptions.
